Ingredients
2 cans whole, peeled sweet potatoes
1/2 cup heavy whipping cream
1 tsp. sugar
1/2 tsp. salt
1/4 cup butter
Topping Ingredients
2 cups pecans
1/3 cup flour
2 tbsp. butter (frozen)
1/2 cup brown sugar
Directions
1. Preheat oven to 350ºF.
2. Dice sweet potatoes. If using fresh potatoes, you will need to boil them until the begin to soften. If you are using canned potatoes, simply drain them.
3. Using a stick blender, puree together sweet potatoes, cream, sugar, salt and 1/4 cup butter.
4. In a Ziploc bag, shake together pecans, flour, and brown sugar.
5. Chop butter into small chunks, shake into pecan mix.
6. Spread sweet potato puree mix into a greased 8-9 inch pan.
7. Sprinkle pecan mix over top of the mix (you can use more or less to taste).
8. Bake, uncovered, for 30 minutes.
