Ingredients
3-5 parsnips
2 cups sliced mushrooms
2-3 tablespoons olive oil
1/2 tsp cumin
1/2 tsp coriander
Directions
1. Pre-heat oven to 350ยบ
2. Clean and peel parsnips. If you have particularly mud-coated parsnips, soak them in water first. You can peel parsnips with a potato peeler.
3. Cut parsnips into chunks - about 1/2 inch to 1 inch square.
4. Put parsnips and mushrooms into a large ziplock bag. Toss with oil and spices.
5. Spread parsnips and mushrooms in a large baking dish. Cover with foil and bake for about 20-30 minutes or until parsnips begin to soften. Stir once or twice.
6. Remove foil and bake for an additional 10 minutes.
7. Serve hot.
Tips
1. If you enjoy roasted onions or garlic, you can add roughly chopped onions and whole cloves of garlic.
2. This goes well with roasted chicken.
