Ingredients
1 cup unsalted butter, softened
1 1/2 cups brown sugar, tightly packed
2 eggs
2 tsp vanilla
1 1/2 cups AP flour
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
3 cups quick oats
4 ounces chopped walnuts
12 ounces mini-chocolate chips (about 1 bag)
Directions
1. Preheat the oven to 350*. Prepare cookie sheets either by greasing them or covering in parchment paper.
2. Mix together butter, sugar, eggs, and vanilla.
3. In a separate bowl, mix together flour, baking soda, salt, cinnamon, and nutmeg.
4. Gradually add dry ingredients to wet, stirring throughout.
5. Mix in oats, nuts, and chocolate chips (if you're using an electric mixer in this recipe, you'll probably want to switch to a spoon at this point).
6. Spoon dough in approximately 1 inch balls onto the cookie sheet. I actually roll the dough into balls by hand, so they are more uniform.
7. Bake for approximately 10 minutes. Keep an eye on them - the bottoms burn easily!
