Ingredients
1/4 lb ground turkey
2 cups (1 can) kidney beans
4 cups (2 cans) diced tomatoes (I used the canned ones with basil.)
1/2 cup water
1/4 cup onion
1/2 tsp garlic
1/2 tsp paprika
1/2 tsp oregano
1/2 tsp tumeric
1/2 tsp cumin
1 tsp ginger
1 tsp mustard seed
2 tbsp vinegar
1 tbsp A-1
Directions
1. Brown turkey in a bit of olive oil with onions, garlic, and dry seasonings.
2. Meanwhile, microwave beans, covered, for 5 minutes in the liquid they come in.
3. Mix turkey, tomatoes, beans, and other seasonings in a soup pan.
4. Bring to boil. Simmer on low, uncovered, till thickened.
Tips
1. Top with shredded cheddar cheese, crackers, or green onion.
2. Leave out the turkey and add more beans, if desired, for a vegetarian version.
