Rosemary, Lemon, and Thyme Potatoes

Ingredients

4 cups new potatoes, roughly chopped into large pieces
1 teaspoon rosemary, minced
1 teaspoon lemon thyme, minced
2 tablespoons olive oil
1 teaspoon minced garlic
1 tablespoon minced onion
½ cup Italian salad dressing

Directions

1. Preheat oven to 450ยบ.
2. Mix olive oil, garlic, onion, rosemary, lemon thyme, and Italian salad dressing.
3. Toss potatoes to coat (a large Ziploc bag works great for this).
4. Spread the mixture in a large baking dish.
5. Bake for 30 minutes, covered in foil. Remove foil and bake for an additional 30-40 minutes, stirring occasionally, until potatoes are tender when poked.

Tips

Check out the ingredients for the Italian salad dressing you're using if you're trying to make a vegan version of this! Some contain cheeses!
