Spaghetti Sauce with Yellow Squash

Ingredients

1 medium yellow squash, sliced (or zucchini)
½ purple onion, minced
3 gloves of garlic, minced
½ cup chopped green bell pepper
2 large cans of diced tomatoes
½ tsp tumeric powder
½ tsp ginger powder
½ tsp red chili flakes
½ tsp cumin
1-2 tbsp olive oil

Directions

1. Saute onions in olive oil until they begin to soften.
2. Add garlic to onions and saute.
3. Add bell peppers and zucchini to onion mix, saute until squash begin to soften.
4. Add spices to vegetables.
5. Add diced tomatoes.
6. Let simmer for 30-60 minutes.
7. Serve over pasta.
