Red and Green Soup

Ingredients

1 cup roughly chopped onion
2 tbsp minced garlic
1 tbsp olive oil
2 cans tomato sauce
7 cans water
2 cans vegetable stock
1 1/2 cup rough chopped zucchini
4 cups rough chopped fresh tomatoes
6 ounces fresh spinach
1/2 tsp fresh ground ginger
1 tsp dried oregano
1/2 to 1 pound pasta
salt and pepper to taste

Directions

1. Saute onions and garlic in olive oil.
2. Mix all ingredients in a large stock pot (you'll need a lot of room to let the spinach cook down).
3. Bring mix to a boil, cover and reduce to a simmer. Let simmer until pasta is cooked and mixture reduces.
4. Serve hot.

Tips

Freezes and reheats well.
